Remember the less food you have in your stomach the quicker and more effective your drugs will be.

For me what I've found to work the best is to take my carbidopa/Levodopa and then eat 1 hour later

That is exactly what I would say. It’s a protein problem not a food in general problem. I was told to wait at least a half hour after taking the levadopa so it can get to work before the proteins in the food can get there and not leave room for it.

It's not so much the empty stomach that matters as not eating it with any protein. The protein interferes with absorption. So if you have a few crackers with the pills to prevent stomach ache or nausea, you should be all right, but eating it with a meal that has milk or eggs or meat would make it less effective.
